​A quick note, the worst oils to use for popping popcorn are those which burn really quickly. When oil burns, the fats in the oil can turn into trans fats, toxic chemicals that create free radicals in your body.

These oils include olive oil and sesame oil. Both of these oils are delicious, but if you want their flavor on your popcorn, better to drizzle the oil over the top after you cook it.

​Now let’s get to the fun part. Here are my three top oils for cooking popcorn:

    1. Sunflower Oil: Sunflower oil has a light, nutty flavor that blends really well with the flavor of the popcorn overall. Another big benefit of sunflower oil is that it is a natural preservative. Popcorn that you cook using sunflower oil will stay fresh for longer than other oils.​

Cooking popcorn on the stovetop is actually incredibly easy! You don’t even need any special equipment, just a large enough pot with a cover that won't go flying off while you’re trying to cook popcorn.

To be totally honest, I cooking microwave popcorn at home for years, because I mistakenly believed that cooking popcorn on the stove would be too difficult for me. Once I realized how unbelievably simple it is, I was a popcorn making friend!

Just go to your nearest market, pick up a big back of popcorn kernels, and get popping!

In order to cook popcorn on the stovetop, you’ll need a deep pot with a cover, 1-2 tablespoons of oil, and 1/2 cup popcorn kernels.

  • Heat the pot on medium heat for 2 minutes. Add the oil, then add the popcorn kernels immediately.
  • Using either a spoon, or shaking the pot by its handles, shake the popcorn kernels around so they are coated with oil. Continue to shake or stir the kernels continuously until you hear the first POP.
  • Once you’ve heard the first pop, put the cover onto the pot. Continue to shake until you start to hear more rhythmic popping inside. Then you can reduce your shaking to just occasional. Once the popping sound dies down to one every 5 seconds, remove from heat.
  • Pour the popcorn out into a bowl. If you want to be thorough, separate the unpopped kernels and put them back into the pot, repeat the cooking process to pop the rest of the popcorn. Enjoy!

So with that in mind, I did some research in my kitchen and came up with the perfect homemade recipe for cheddar cheese popcorn.

It took more than a few tries, and a few ugly results, to come up with this recipe.

But I finally did it!

This popcorn recipe will satisfy all your savory, salty, and crunchy cravings in one deliciously cheesy bite.

With the crisp popcorn coated in flavorful, slightly melted cheddar, you’ll get a little bit of everything in each mouthful.

You’ll notice, as you chew on this delicious popcorn creation, a slightly spicy undertone. Or, if you decide to be heavy handed, it can be a super spicy flavor!

Depends on how much cayenne you include. If I’m feeling spicy, I’ll double up on the cayenne. But just a warning, it can be pretty hot!

This recipe is a creative take on the Cheddar Cheese Popcorn recipe found at Houseful of Handmade. Without further ado, here is my recipe for savory, cheesy, and a little bit spicy, cheddar cheese popcorn.

  • Ingredients​:
  • ½ cup organic popcorn kernels, freshly popped. (should make about 2 cups popped)
  • ¼ cup butter (unsalted)
  • ¼ tsp cayenne pepper
  • 1 sprig of Thyme1 dash garlic powder¼ tsp sea salt
  • ¾ cup freshly shredded sharp cheddar cheese
  • Instructions
  • First, warm up a small saucepan on medium heat. Melt the butter, then add the cayenne, garlic powder, and salt. Continue to heat until the butter starts to simmer slightly.
  • Remove the butter from the heat and pour it over the popcorn, stirring until the popcorn is evenly coated.
  • Spread the popcorn over a large baking sheet, and sprinkle the shredded cheddar cheese and thyme leaves over the top.
  • Place the rack into the oven, and turn the broiler onto low. Cook the popcorn just until the cheese is melted but not burnt. It should take about 2 or 3 minutes.
  • Transfer the cheesy popcorn into a bowl and enjoy!

In fact, the first time that I ever heard of black popcorn, I thought it sounded totally crazy! It sounded, to me, like a type of popcorn that had already gone bad and started to mold!

Why would I want to eat black popcorn? But it turns out that I was totally wrong. You won’t believe how cool black popcorn is!

Completely opposite to what I expected, black popcorn is an extremely healthy popcorn variety that you can easily exchange with your usual choice of popcorn kernel!

Its dark color comes from the type of corn that it is made from: Dakota black corn or Aztec black corn.

Both of these types of corn are indigenous to the Americas. This is an ancient grain brought to the modern day, and it brings so many health benefits along with it.

The biggest benefit that black popcorn provides is extra antioxidants. Antioxidants, for those who don’t know, are nutrients in our food that promote health within our bodies.

Antioxidants can help us fight inflammation, disease, and even help reduce and prevent cancer!

The best part?

All organic popcorn has one type of antioxidant: polyphenols. But black popcorn has the highest amount of antioxidants of any popcorn on the market.

Along with the polyphenols, black popcorn also provides anthocyanins, a type of flavonoid. The anthocyanin causes the black color of the popcorn and helps your body fight against free radicals, toxic molecules that can damage cells and cause cancer.

But sometimes, you just want to take that healthy snack and make it a little bit decadent. You know?

I love eating healthy food. I love making healthy food for my family and giving my children nourishing snacks that help them grow into healthy adults. But when it’s time to make a treat for my kids, I turn to chocolate popcorn.

This recipe is such a hit in my household. I try to make enough for everyone to eat, but whenever I make a bowl of it, it disappears before I even have time to blink!

There is something so deliciously opulent about crunching on chocolate covered popcorn. It’s a little bit salty, a little bit sweet, and very chocolatey. And although I try my hardest to be a healthy person, I definitely have a sweet tooth, and that sweet tooth loves chocolate.

Luckily, I found a way to satisfy my sweet tooth without bringing on hundreds of calories. What’s my secret? I’ll let you know: It’s dark chocolate!

Remember when you were a kid and you’d go to the carnival? Beyond all the flashing lights, clowns, and people calling out to get you to play games, the best part of the night was the snacks.

I used to beg my mom to buy me carnival popcorn and cotton candy. I’d munch away on those sugary snacks to my heart’s content, oblivious to the after effects of the sugar bomb I was putting into my stomach.

As I got a bit older, I wanted a way to enjoy that same carnival flavor, and effect, without putting so much sugar into my body.

So you can imagine how excited I was when I stumbled upon photos of bright blue popcorn on the internet. It was the perfect combination of the sugary blue cotton candy, and the salty sweet carnival popcorn I remembered from my youth!

But how to make it?

I tried a few different varieties of cooking techniques, using butter, then oil, then corn syrup, to find the method that worked best and got me the closest to the flavors I remembered as a child.

It wasn’t the quickest creative process, and my kitchen was a disaster by the end of it, but I finally figured out how to make carnival blue popcorn!

As popcorn snacks go, this is a pretty sweet popcorn, with just a little bit of salt added, to give that amazing salty sweet character that I love so much.

If you aren’t into the salty sweet thing, you could easily omit the salt and just enjoy a deliciously sweet blue popcorn.

  • Ingredients
  • 1 cup popcorn kernels, popped (should yield 4 cups)
  • ½ cup organic sugar
  • ¼ cup water2 drops blue food coloring
  • 1 tsp sea salt
  • Instructions
  • Heat a small saucepan over medium heat until warm.
  • Add water and sugar, and bring to a simmer.
  • Stirring constantly, simmer the mixture until it reduces down into a syrup. As it begins to thicken, add the two drops of food coloring, and stir it into the syrup.
  • Once you’ve reached a syrup, remove the mixture from heat, and pour the blue syrup over the popcorn.
  • Mix the popcorn well until it is evenly coated in blue. Let the popcorn sit for 10 minutes, then enjoy!

5. Not Your Average Rainbow Popcorn

Ah, rainbow popcorn. So bright, so colorful, so attractive on the table. This little snack is such a delight to make, and it is always the centerpiece of the dessert table at my parties.

Having a bowl full of rainbow popcorn just reminds me of unicorns and happiness, plus it really brightens up a table.

If you’re ready to take your party popcorn to the next level, you have to try this rainbow popcorn recipe. The cooking process can get pretty messy, but that makes it a super fun project to do with the kids!

Let them get their hands a bit dirty, all covered in rainbow sugar, and the best part is that they can still lick it off their fingers! No eggs are a win, in this recipe.

This recipe definitely kicks the sugar level up a notch, using corn syrup to get that sweet, candied flavor in the popcorn. The rainbow colors obviously come from food dye.

Make sure you pick up at least 5 different food dyes to get the best rainbow effect in the bowl of popcorn. A splash of vanilla extract gives the candy flavor just a touch of a sophisticated edge, without taking it into the realm of snacks that the kids don’t enjoy.

  • 10 cups popped popcorn
  • ½ cup light corn syrup
  • 1/8 cup butter
  • 1 1/5 cup powdered sugar
  • 1 tsp water
  • 1 tsp vanilla
  • 1/8 tsp salt
  • 5 food colorings of your choice
  • Instructions
  • Heat up a small saucepan over medium heat. Add the corn syrup, butter, sugar, water, vanilla, and salt. Stir the mixture constantly until it comes to a boil.
  • Separate the 10 cups of popcorn into 5 separate bowls (or however many bowls for the number of food colorings you are using).
  • Separate the corn syrup mixture into 5 portions. Drop 1 drop of food coloring into each portion and stir until evenly blended.
  • Pour the corn syrup mixture over the popcorn. Then stir the corn syrup and popcorn together until evenly coated. Use a different spoon for each bowl so that the colors don’t blend.
  • Popcorn should be sticky but not sticking together into clumps.Let the popcorn rest in five separate bowls until it is cooled. Then pour all 5 colors into a single large bowl and mix together. Voila! Rainbow popcorn. Enjoy!

Ah, the simple pleasure of buttered popcorn. The flavor of movie theaters everywhere. The warm, homey smell of melted butter, and the salty crunch of popcorn.

Eating buttered popcorn always reminds me of rainy weekends from my childhood, heading out to the movies with my grandparents.

But whenever I tried to make buttered popcorn at home, I always seemed to turn it into a soggy, buttery mess. I guess my ratio of butter to popcorn was off.

I also struggled to get the butter to evenly coat the popcorn. I’d pour the butter into the popcorn, but it never worked out right.

I’d get a few pieces that were completely soaked with butter, and the rest of the popcorn would have no butter at all! It was devastating.

Luckily for you, I figured out the magic way to get evenly coated buttered popcorn with minimal effort. The only things you need to make delicious, perfectly coated butter popcorn are popcorn, melted butter, and a paper bag.

Sound too good to be true? I promise you, it isn’t. I used to avoid making buttered popcorn at home because I always hated the results. But since I figured out this trick, I can make healthy(er) buttered popcorn whenever I’m watching movies at home.

  • Ingredients​
  • ½ cup popcorn kernels (5 cups popped)
  • ½ stick salted butter
  • 1 paper bag
  • Instructions
  • Put all the popped popcorn aside into a large bowl.
  • Over medium heat, warm up a small saucepan. Then place the butter in the pan and melt it until all the butter is liquid, stirring constantly.
  • Pour some of the butter into the bottom of the paper bag, drip almost all the rest around the sides of the paper bag, then fill the bag with the popcorn. Pour the remaining butter onto the top of the popcorn.
  • Close the bag and shake well. Pour out popcorn into the bowl, and enjoy!

Every Christmas, the most popular gift in my friend group is a big bag of Moose Munch. The only problem with this is how expensive it is!

Buying bags of Moose Munch for all my friends can really deplete my wallet some years! My solution? Make my own moose munch at home! And moose munch is really quite simple, it’s just chocolate caramel popcorn!

No one is going to mistake chocolate caramel popcorn for healthy food. But around the holidays, calories stop existing, and everything is guilt free snacking!

Seriously though, this popcorn is so outrageously delicious, even the strictest clean eaters should make an exception once a year to eat this stuff. I guarantee you won’t regret it.

The secret to making it so unbelievably tempting is the lethal combination of the chocolate, caramel, salt, and macadamia nuts!

Oh yes, we go all out in this recipe to make the most deliciously sweet and salty, crunchy and all around incredible snack that has ever come out of your kitchen. Your family will be begging you to make this again as soon as they finish the first bowl.

When I want to wow my friends, delight my kids, or bring the most popular dessert to a house party, I always go for this incredible recipe for chocolate caramel popcorn.

  • Ingredients
  • ½ cup popcorn kernels (makes about 5 cups popped)
  • 1 ½ tsp baking soda
  • 3 cups granulated sugar
  • 1 ½ tbsp. salt
  • 3 tbsp unsalted butter, cut into small chunks
  • ½ cup macadamia nuts½ cup dark chocolate chips
  • Instructions
  • Pour popped popcorn into a large bowl, and add macadamia nuts.
  • Separate baking soda into a small dish and set aside.
  • Heat a large saucepan over medium heat. Combine sugar, salt, butter, and 1 cup water into the saucepan and bring the heat up to high. Stir gently until all the sugar is submerged in water, then stop stirring.
  • Cook the mixture on high heat without stirring until it all melts, boils, and turns into a thick caramel. This may take 20 minutes. The caramel will be darker below the surface so try not to over cook it.
  • Remove caramel from heat and immediately pour in the baking soda. Stir it completely until all the baking soda is mixed with the caramel. It’s recommended to do this on or near the sink because the baking soda will cause the hot caramel mixture to bubble and might overflow. But this step is really important. The baking soda will make the caramel much easier to eat later.
  • Pour the still bubbling caramel over the popcorn in the bowl. Don’t scrape the sides of the pot, the burnt caramel does not have a good flavor.
  • Stir the popcorn and caramel together until the popcorn and macadamia mixture is evenly coated with caramel.
  • Pour this mixture onto a lined baking sheet in one single layer. Allow to cool for 5 to 10 minutes, then break the popcorn up into chunks.
  • Melt the dark chocolate chips in a double boiler, or in the microwave. Using a spoon or spatula, drizzle the chocolate over the popcorn chunks you made earlier. Allow this to cool for 45 minutes, or until the chocolate has completely hardened.
  • Now the popcorn is ready to be the star of a party, to be a perfect Christmas gift, or to be enjoyed by you and your loved ones!

  • ½ cup popcorn kernels (makes 5 cups popped)
  • ½ bag white chocolate chips
  • ½ tbsp Coconut oil.
  • ¼ cup salted peanuts
  • Instructions:
  • Pour the popped popcorn into a large bowl, then stir in the peanuts. Pour this mixture onto a large baking sheet.
  • Pour white chocolate chips and coconut oil into a double boiler.
  • Cook until the white chocolate is completely melted and the coconut oil completely dissolved. Stir continuously until the two are combined.
  • Next, pour this mixture over the popcorn gentle, trying to coat all the pieces evenly.
  • Let dry for 10 minutes, then enjoy!

This snack is guilt-free, delicious, and even healthy! If you haven’t discovered it yet, you need to try peanut butter popcorn.

Honestly, this snack is so simple to make but hits all the cravings right on the head. If I’m feeling a bit hungry in the middle of the day, this is almost always my go-to snack.

You get nutrients from the whole grain popcorn, healthy fats and proteins from the peanut butter, and a full tummy from all the fiber. It’s an all-around win.

  • Ingredients:
  • ½ cup popcorn kernels (makes about 5 cups popped)
  • ½ cup creamy all natural organic peanut butter
  • Dash of sea salt
  • 1 tbsp organic honey or agave nectar (optional)
  • Instruction:

Raise your hand if you ever made rice krispy treats as a kid. I bet that you did. I know I did. I loved making those deliciously sweet bars with my mom on the weekends.

And let’s be real, we all know that the homemade variety was so much more delicious than the store-bought, pre-packaged kind.

Well, what if I told you that you could have all the sweet, gooey, chewy goodness of a rice krispy treat, combined with the satisfying crunch of a handful of popcorn. I know, it sounds too good to be true.

But it’s totally possible!

I want to say that I came up with this idea myself, but to be honest it was my daughter who first gave me the idea. We were making rice krispy treats together when she mentioned, out of the blue, that these would be delicious if we made them with popcorn.

From that moment one, there was no question, we had to try it. I spent some time looking for a recipe online, found this one from Your Home Based Mom, and got creative from there.

How About These days?

Marshmallow popcorn is my daughters favorite snack to eat on movie nights. It’s not the lowest sugar recipe I’ve ever invented, so we don’t eat it every week, but it usually turns up in the kitchen once a month!

It’s a totally delicious and low-fat way to get your sweet fix in a moderately healthy, whole grain popcorn kind of way.

For this recipe, I’ve given instructions for making it on the stove top. It’s a little more labor-intensive, but the end result is so much more delicious than the microwave flavor.

  • Ingredients:
  • ½ cup popcorn kernels, popped (makes about 5 cups)
  • ½ stick of butter
  • ½ bag mini marshmallows
  • ¼ cup brown sugar
  • Instruction:
  • Pour popped popcorn onto a baking sheet and spread it out, so it is only one layer of popcorn across the whole sheet.
  • Meanwhile, warm up a saucepan over medium heat on the stove. Put the butter into the pan and melt completely, without letting it come to a boil.
  • Stir in the brown sugar and dissolve.
  • Next, pour in the marshmallows little by little, allowing it all to melt down into a goo.
  • Once all the marshmallows are completely dissolved, and the butter and sugar are completely combined with the marshmallow, remove from heat.
  • Immediately pour the marshmallow mixture over the popcorn. Mix the popcorn and marshmallow mixture together.
  • Caution! It’s really sticky, so best to use a greased spoon or spatula.
  • Let stand for about 15 minutes, then enjoy!

  • First, preheat your oven to 250F, making sure to have 2 shelves ready to cook popcorn inside. Also, arrange 2 baking sheets lined with parchment and set them aside.
  • Pour the popped popcorn into a large bowl and set aside as well.
  • Now to make the caramel. First, warm up a large saucepan over medium heat. Add the butter and cook until melted.
  • Stir in the sugar until completely moist, then increase the heat and bring the mixture to a boil. Boil for 3 to 4 minutes, stirring constantly.
  • Remove the caramel mixture from heat and immediately add the baking soda, salt, and vanilla. This will cause the caramel to bubble and perhaps overflow the pan, so try to do this over the sink.
  • Stir constantly until a thick sauce form in the saucepan.
  • Next, gradually pour the caramel sauce onto the popcorn, stirring constantly. Stir popcorn until evenly coated with caramel sauce.
  • Divide the popcorn and spread it onto the two baking sheets that you already prepared. Make sure the popcorn is spread into an even layer.
  • Bake the popcorn for 1 hour, stirring it every 15 minutes and trying to break up most of the clumps.
  • Remove from oven and leave to cool completely. Enjoy!

Vegan Shepherd’s Pie –Perfect Irish meals for St. Patricks Day

Growing up on the east coast of the United States, St. Patrick’s Day was always one of my favorite holidays.

As a kid, I looked forward to dressing up in green, talking in a fake Irish accent, and eating lots of green food and candy at the parties.

In school, our teachers would fill big bowls with green M&M’s and ask us to guess how many were in the bowl. I never guessed right, but I still loved eating them afterward!

Now, as an adult, I no longer eat entire bowls of M&M’s, but I still love St. Patrick’s Day.

Every March I look forward to whipping out my green sweaters, cheesy four leaf clover shaped hats and hitting the streets to party it up and celebrate with my friends.

And of course, eating all the delicious Irish meals.But as I get older, and get more interested in health and wellness, I’ve discovered the blessing of a vegan diet.

Unfortunately for me, not many traditional St. Patty’s day foods fall into the vegan category.

Sure, you can eat the french fries, or separate out the roasted vegetables. But that isn’t a very delicious or celebratory way to enjoy St. Patricks Day.

What I was missing was a dish that was quintessentially Irish, while still being vegan. It seemed like a tall order, though I was determined to make it work.

My journey to discover the perfect vegan St. Patrick’s Day was a long and delicious one.

I spent plenty of time making a mess in the kitchen, throwing together different ingredients and weird substitutions.

I consumed hours trying out different flavor combinations and meat replacements in the search for that perfect St. Patricks Day vegan dish.

Believe me, it took some time to find the right combination, but eventually, I did it. I found the absolute best dish to celebrate St. Patrick’s Day with your vegan loves: Vegan Shepherd’s Pie.

This Vegan Shepherd’s Pie will hit all the marks for your holiday celebration. It’s hearty, delicious, and has that authentic Irish aroma.

It is bursting with traditional flavors from earthy herbs such as thyme, rosemary, and vegetables like carrots and mushrooms.

And obviously, no Irish meal is complete without the potatoes.

But this Shepherd’s pie takes it one step further and mixes more traditional russet potatoes with the decadently sweet potatoes.

Blending the two potatoes together was my genius decision to get more nutrition while keeping the indulgent quality of the potato topping.

If you’re ready to create the healthiest, tastiest, most jaw-dropping vegan St. Patrick’s Day meal of all time, warm up your oven and get those ingredients ready.

Here is my recipe for a vegan Shepherd’s Pie.


  • 3/4 lb Sweet Potatoes
  • 1/4 lb Russet Potatoes
  • 2 tbsp coconut oil or dairy free margarine
  • 1 onion
  • 2 carrots
  • 4 cloves garlic
  • 2 cups sliced brown mushrooms
  • 1/2 cup sun-dried tomatoes
  • 1/2 bunch fresh thyme
  • 5 springs of fresh parsley
  • 2 springs of fresh rosemary
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon red wineJuice of
  • 1 lemon
  • 2 cups of lentils cooked (1 cup dry)
  • 1 cup vegetable broth

  • Preheat the oven to 350 degrees Fahrenheit
  • While the oven is heating, peel, and chops all the potatoes into small squares. In a large cooking pot, put the potatoes in cold, salty water. Bring to a boil, then simmer for 15 minutes, or until the potatoes are soft, and you can easily squish a fork through them.
  • Drain the potatoes and set aside, until dry and slightly cooled.
  • Once the potatoes are dry, heat up a large pan, and melt the coconut oil or vegan margarine. Add a dash of salt and black pepper. Cooked for 3 minutes.
  • Transfer the potatoes to a large bowl, or into a food processor. Mash the potatoes by hand, or blend them into a chunky mush. Set aside.
  • Finely chop the onion, slice the carrots, and mash the garlic.
  • Pick the leaves off of the stems of the thyme and rosemary. Roughly chop the parsley.
  • Chop up the mushrooms and sun-dried tomatoes
  • Heat a pan over medium heat, add a healthy splash of olive oil. Add the garlic and onions and cook, stirring constantly, until the onion begins to turn translucent.
  • Add the onions, thyme, and rosemary to the pan, and cook for 5 minutes.
  • Stir in the mushrooms and sun-dried tomatoes. Cook until the mushrooms become slightly soft and browned.
  • Add the vinegar and wine, cook for 2 more minutes, until slightly reduced, then add the vegetable stock, and lentils. Allow to simmer for 10 minutes, until the mixture becomes somewhat thick.
  • Add the parsley to the pan, and season with salt and pepper. Transfer this into a baking pan. Spread the mashed potato mixture across the top.
  • Place the pan into the oven and bake for 10 to 15 minutes, until the top is golden brown and very hot.
  • Let cool for at least ten minutes, then serve!

Easy Substitution Ideas for Vegans

Slowly, you will get the hang of eating a vegan lifestyle. Soon, you realize that you can make numerous recipes if you understand easy substitution in recipes.

If you want to try some of your old favorite recipes, learn how to replace animal ingredients with vegan ones!

  • Milk: Replacing milk is probably the easiest thing. You can use soy milk, cashew milk, coconut milk, and almond milk.

    If you need to make buttermilk, just add 1 tbsp of vinegar or lemon juice for each cup of milk. When substituting milk, measure cup for cup. There are no differences.
  • Cheese: There are many vegetarian kinds of cheese on the market. Always read ingredients to make sure there is no casein. 

    If you want to replace cottage or ricotta cheese, try crumbled tofu, but it won't create the same creaminess that you would want in the recipe.
  • Eggs: One of the hardest things to substitute in recipes in eggs. If you want to make scrambled "eggs" for breakfast, give tofu scramble a try.

    Most stores even sell Tofu Scrambler in boxes. This recipe is kid friendly, so you can quickly adapt with vegetables or vegan bacon bits.
